Mixed Greens w/ Lemon Pepper Dressing

Ingredients

  • 1 small head butterhead lettuce, chopped
  • 1 small head of romaine lettuce, chopped
  • 1 rotating green, chef’s choice, optional
  • lemon
  • olive oil
  • salt
  • pepper

If you’ve read through my recipes, you will have noticed that I’ll put lemon juice and olive on just about anything. Of all of the food pairings out there, these two special ingredients can make almost anything taste amazing and a giant pile of delicious mixed greens is among the tastiest of options. I know–this is barely a recipe, but I eat one of these salads almost every day and you should too! Leafy greens are some of the best foods you can put in your body. If you can, buy local, buy organic. Get the best stuff you can. Local organic greens, or greens you grow yourself using organic methods have exponentially more nutrition than what you can by in the store, even Whole Foods or New Seasons. If you still have some cash left over from your greens purchase, splurge on some good olive oil, it will make a world of difference.

Method

  1. Combine olive oil, lemon juice with about a ration of 3:2 olive oil to lemon juice in a medium sized jar
  2. Season with salt and pepper, close the lid, then shake.
  3. Toss salad with and serve.
