This recipe is a direct copy of Graham’s pasta with pea shoots, of which I had the pleasure of enjoying during my stay at Hiyu. Pea shoots are the earliest possible green you can harvest in the season and they are delicious–I could easily eat them by the handful. Make sure you only use the first 2-3 inches, as those are the most tender and flavorful portion of the shoot. Garnish with some pea flowers if they are in bloom and pair with Graham’s excellent Pinot Grigio.
