Pasta w/ Pea Shoots

Ingredients

  • 1 lb pasta
  • 1 large bunch of pea shoots, trimmed 2-3 inches from top of plant
  • 1 dozen pea flowers
  • 2-4 garlic cloves, crushed
  • 1/4 cup olive oil
  • Parmigiano-Reggiano
  • salt
  • pepper

This recipe is a direct copy of Graham’s pasta with pea shoots, of which I had the pleasure of enjoying during my stay at Hiyu. Pea shoots are the earliest possible green you can harvest in the season and they are delicious–I could easily eat them by the handful. Make sure you only use the first 2-3 inches, as those are the most tender and flavorful portion of the shoot. Garnish with some pea flowers if they are in bloom and pair with Graham’s excellent Pinot Grigio.

Method

  1. Bring a large pot of water to a boil and cook pasta as instructed here
  2. Combine olive and garlic in a large pan and cook until garlic is pale gold, then remove garlic cloves and set aside.
  3. Add pea shoots, and cook ever so briefly. ~2 minutes.
  4. Toss pasta, and pea shoots
  5. Serve with grated Parmigiano-Reggiano and pea flowers.
