Pasta Salad

Ingredients

  • 1 lb. penne
  • 1 tbsp. olive oil
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 1 tsp garlic powder
  • 1 large green pepper finely diced
  • 16 oz olives, sliced
  • 1 1/2 cup Pecorino
  • 1 cup red wine vinegar
  • salt
  • pepper

When you taste for seasoning it will taste very vinegary and cheesy. That’s the way it should taste. If it doesn’t, you need to add more vinegar and cheese. The amount in the recipe should be enough for one pound pasta. The pasta really absorbs the flavors and you won’t know how it really tastes until the next day. At that point, you can readjust the seasonings again if needed.

Method

  1. Cook pasta to very al dente but not too hard
  2. Rinse cooked pasta under cold water until cool and drain well
  3. Put in large bowl
  4. Add oil, spices, salt, pepper and green pepper.
  5. Mix well, don’t be afraid to use your hands
  6. Add olives, pecorino, and vinegar and continue to mix
  7. Taste for seasoning
