Bruschetta w/ Fresh Heirloom Tomato

Ingredients

  • 6 medium-sized heirloom tomatoes
  • 4 large garlic cloves, minced
  • basil, roughly chopped
  • 1 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar

I tend to label all my recipes with the season most appropriate for the dish, but modern grocery stores have really blurred the seasonal lines. This recipe is different. For this, use the highest quality fresh heirloom tomatoes found at your local farmers market. Or perhaps even better, grow them yourself!

Method

  1. Place tomatoes, garlic, basil, and olive oil into a large serving bowl. Stir mixture until all tomatoes are coated with oil and garlic is evenly distributed throughout the sauce.
  2. Cover the bowl and let everything marinate for about 4 hours at room temperature. Add salt and pepper to taste.
  3. Serve over toaster bread with more fresh basil and Parmesan cheese, if desired
