Foraged Nettle Soup w/ Sauerkraut

Method
- Cook the rice in a pot using a rice-to-water ratio of 2:1. ~1 hr.
- In a large pot, add olive oil and onion and cook for ~5 minutes, or until translucent.
- Add celery and carrots, cook for another ~8 minutes.
- Add broth and bring to a boil, then add then add the nettles. Reduce the heat to low and cook for ~30 minutes
- Add chicken, cook for another ~5 minutes until heated.
- Serve soup over rice and top with parsley and a generous amount of sauerkraut
