Foraged Nettle Soup w/ Sauerkraut

Ingredients

  • 1 cup brown rice
  • 4 cups fresh foraged nettles, stems removed
  • 5 medium carrots, diced
  • 5 stalks celery, diced
  • 3 cups roasted chicken, shredded
  • 4 cups chicken or vegetable stock
  • sauerkraut
  • parsley
  • salt
  • pepper
  • olive oil

Method

  1. Cook the rice in a pot using a rice-to-water ratio of 2:1. ~1 hr.
  2. In a large pot, add olive oil and onion and cook for ~5 minutes, or until translucent.
  3. Add celery and carrots, cook for another ~8 minutes.
  4. Add broth and bring to a boil, then add then add the nettles. Reduce the heat to low and cook for ~30 minutes
  5. Add chicken, cook for another ~5 minutes until heated.
  6. Serve soup over rice and top with parsley and a generous amount of sauerkraut
