Potatoes w/ Swiss Chard and Ham

Ingredients

  • Swiss chard, chopped
  • Yukon Gold potatoes
  • extra-thick sliced ham
  • garlic, chopped
  • olive oil
  • Pecorino Romano

Foglia Pesti is one of my favorite things to eat on the planet. It’s not really an entree, even though I routinely eat it as such. I created this recipe in its essence, one that is more suited to be served as a main course. You could also serve this over polenta or couscous to bulk it up even further.

Method

  1. Preheat the oven to 400 deg F.
  2. Cut the potatoes into ~ 1 inch cubes then coat with salt, pepper, and olive oil.
  3. Bake for ~10 mins.
  4. When the potatoes have roughly 5 minutes remaining, chop the garlic and add to a large skillet with some olive oil.
  5. One the potatoes are done, add them to the skillet.
  6. Cook for ~ 5 - 10 minutes on medium-high, just below the smoking point of the olive oil.
  7. Chop the ham into small pieces
  8. Add the swiss chard and ham to the skillet contents
  9. Cook for ~5 minutes.
  10. Serve with olive oil, grated Pecorino Romano, and red chili pepper
